Chili Gift Mix (Makes 4 Gifts)

A great gift or make ahead for a real time-saver for your own kitchen. For vegetarian chili, substitute canned or sautéed mushrooms for the ground beef. Give with my moist northern cornbread mix or serve with Moist Northern Cornbread (Cornbread Buttermilk).
Ingredients:
1/2 cup chili powder
2 teaspoons salt
2 teaspoons garlic salt
1 1/2 tablespoons cumin
1 1/2 tablespoons oregano
1 tablespoon cayenne pepper
1 cup parsley
2 cups dehydrated onion
3/4 cup red kidney beans (dried)
3/4 cup pinto beans (dried)
4 lbs ground beef
60 ounces petite diced tomatoes
16 cups water
Directions:
1. Mix together chili powder, salt, garlic salt, cumin, oregano and cayenne pepper in a med. bowl and mix together thoroughly.
2. Divide spices into 4 equal parts and place in separate zip-loc baggies.
3. Add 1/4 cup parsley and 1/2 cup dehydrated onion to each baggie.
4. Mix together kidney and pinto beans in a med. bowl.
5. Add 1 1/2 cups beans to each baggie and seal.
6. To give as a gift, place baggie in a nice container or cloth bag and be sure to include instructions!
7. Chili prep instructions:-.
8. What you'll need: 1 container of chili mix, 1 pound ground beef, 4 cups water and 1 (15 oz) can of petite diced tomatoes.
9. Brown beef in a 4-qt pot.
10. Drain beef and return to pot.
11. Stir in chili mix and 4 cups water.
12. Bring to a boil. Cover pot and reduce heat. Simmer 90 minute Stir in tomatoes. Simmer, covered, 30 minutes or until beans are tender.
13. Top with desired toppings.
