A friend cooked this, then gave me the recipe absolutely wonderful. My family makes me cook this at least once a week. We eat it by itself, on chil dogs, over rice, frito pies, but the best way is with sweet yellow cornbread. This will make a nice size pot. Did not put how much of each of the spices, you take and do these to your taste. I like lots of garlic. To make this quick to make buy the frozen onions and peppers. Have not cooked this in crock pot but would be great that too. Enjoy.
Ingredients:
3 lbs hamburger meat
salt
black pepper
garlic powder
chili powder
olive oil
2 large yellow onions, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 red bell pepper, chopped
2 cups chopped celery
5 (15 ounce) cans kidney beans
2 (15 ounce) cans tomato sauce
2 quarts of v-8 tomato juice
1 (10 ounce) can rotel tomatoes (optional)
Directions:
1. Brown hamburger, drain and set aside.
2. In pot you will be using for chili cook onions, peppers, celery with a little olive oil until almost tender.
3. Add to pot beans, tomato sauces, tomato juices, add your spices until you have it to your taste.
4. add meat
5. simmer for at least 45 minutes still adding spices to make it yours.
