Chili -Corn Crusted Flounder or Tilapia

Ingredients:
4 6 oz fish fillets
1/2 cup(s) cornmeal
1 cup(s) salsa
2 teaspoon(s) chili powder
1 teaspoon(s) ground cumin
1/4 teaspoon(s) salt
1/4 teaspoon(s) black pepper
milk
vegetable oil
fresh cilantro chopped
3/4 cup(s) ripe tomatoes diced
2 fresh corn
shallots chopped
1/2 teaspoon(s) juice of 1/2 lime
old bay seasoning
Directions:
1. Rinse fish, pat dry. On waxed paper, combine cornmeal, 2 tsp chili powder, 1 rsp cumin, and 1/4 tsp each salt , pepper. Dip fish in milk, then into cornmeal.
2. Heat 2 T. oil in large skillet over med-hi heat. Add the fish, cook 3-5 min, turning once until fish flakes easiy. Serve over salsa and sprinkled with cilantro.

4. Coombine tomatoes, fresh corn, chopped shallots, lime juice, Old Bay seasoning.
