This a great salad for summer... A different twist on it with the chili..
Ingredients:
2 cups diced chicken
2 tablespoons lemon juice
1/2 teaspoon salt
1/2 pint cherry tomatoes, cut in half
1/4 cup chopped red onions
shredded lettuce
1 clove garlic, minced
1 1/2 teaspoon chili powder
1 large ripe avocado, peeled, pitted, cut into pieces
1/2 cup sour cream
Directions:
1. In a large bowl, combine all ingredients except lettuce; toos gently.
2. serve over lettuce.
3. Regrigerate leftovers.
4. You may omit the avocado if desired.
