Chili Cheese Rice

An easy side dish. Plan ahead as you must cook the rice before putting together this dish.
Ingredients:
1 cup chopped onion
1/4 cup butter, melted
4 cups cooked rice
1 (16 ounce) container sour cream
1 cup ricotta cheese
1 teaspoon salt
1/4 teaspoon black pepper
2 (4 1/2 ounce) cans chopped green chilies
2 cups shredded cheddar cheese or 2 cups monterey jack cheese
Directions:
1. Preheat oven to 325ยบ.
2. Lightly grease a 2 quart casserole.
3. In a large saucepan, saute onion in butter.
4. Remove from heat and stir in rice, sour cream, ricotta, salt, pepper, and chilies.
5. Spoon half of rice mixture into casserole.
6. Top with half of cheese.
7. Top with remaining rice mixture.
8. Bake uncovered for 20 minutes; sprinkle with remaining cheese and bake 5 minutes or until cheese is melted.
