Chili Bean And Sparerib Soup

This is fantastic and very comforting. I can't tell you how tasty this is. My sister-in-law makes this and we love it. Hope you do too.
Ingredients:
1 pound dried red beans rinsed and drained
7 cups water
1 tablespoon vegetable oil
2 pounds country style spareribs
1 green bell pepper seeded and chopped
2 medium onions sliced
2 cloves garlic minced
2 teaspoons salt
2 tablespoons chili powder
1/2 teaspoon ground cumin
8 ounces tomato sauce
1 cup shredded pepper jack cheese for garnish
Directions:
1. Place beans in a large bowl then add 4 cups of the water and let stand overnight.
2. In a large deep pot heat oil over medium heat then brown spareribs well in oil on all sides.
3. Add green pepper, onions and garlic then brown lightly.
4. Add remaining 3 cups water then bring to a boil and reduce heat.
5. Cover and simmer for 2 hours.
6. Remove spareribs from pan then slice meat from bones and return to cooking liquid in chunks.
7. Discard bones and fat.
8. Add soaked beans and their liquid, salt, chili powder and cumin then bring to boil over high heat.
9. Cover then reduce heat to low and simmer for 2 hours then mix in tomato sauce.
10. Cook beans an additional hour then serve sprinkled with cheese.
