It is a Chili Dish. Good for lunch or dinner. It is always a little tastier the next day. (As are a lot of foods). I always use Frito Scoops with this Chili. They add a little crunch to the meal.
Ingredients:
1 pound of ground beef (can be over a pound), use lean meat if you can. (ground turkey can be substituted for ground beef if preferred).
3 cans of kidney beans or pinto beans or chili beans (you pick your favorite)
3 cans of campbell's tomato soup (concentrate)
3 cans diced tomatoes (del montes)
1 can diced black olives (small can)
2/3 sticks of celery (dice them up and save)
1/ 2 packs of chili mix (like lawry's or mccormick's)
bag of frito scoops
Directions:
1. Cook meat until brown using the chili mix (follow directions on mix package) (if more than a pound recommend 2nd pack of chili mix)
2. Dice up celery and save until last 15 minutes of cooking.
3. Using a dutch oven or equivalent pour meat and all ingredients-kidney beans, tomato soup, diced tomatoes, black olives into the dutch oven. Do not forget the celery. (last 15 minutes).
4. Serve over the Frito scoops in your favorite bowl. Should serve 4 to 6 people easily.
5. Bake at 350 for about 90 minutes (Covered)
6. Serve
