You won't need to buy queso at the store again after you try this and see how easy it is to make. It tastes too good. Recipe courtesy of The Dude Ranch Cookbook and T Cross Ranch in Dubois, WY. YUMMY! My friend dipped zucchini, carrots, and apples instead of the chips. I especially enjoyed it with apples.
Ingredients:
2 tablespoons vegetable oil
1 large onion, peeled and chopped
1 lb velveeta cheese
1 lb sharp cheddar cheese, grated
2 cups hot salsa
1 tablespoon ground cumin
4 ounces green chilies, chopped
1 large corn chips or 1 large tortilla chips, for accompaniment
Directions:
1. In a large skillet over medium heat, warm the oil.
2. Add the onion and saute until translucent.
3. Add the cheeses, salsa, cumin, and chilies.
4. Stir to combine, making sure that the cheeses are well blended and completely melted.
5. To serve, transfer the chile to a fondue pot with a candle to keep the chile warm.
6. Serve with the chips.
7. This dish freezes very well (if you have any leftovers).
