Chickpealentil And Bean Soup

this soup will warm u up on a cold day filled with lots of flavor it will be a hit with the kids my one year old loves it
Ingredients:
1 tbls of olive oil
1 large red onion chopped
2 cloves of garlic crushed
1tsp ground cumin
1tsp of ground tumeric
1tsp ground sweet paprika
1/2 tsp ground cinnamon
2x425g cans of chickpeas rinsed and drained
1 340g can red kidney beans rinsed and drained
1/2 cup of red lentils
1.25 litres of vegetable stock(5cups)
1/4cup (60mls) lemon juice
1/3 cup chopped fresh mint
500g spinach shredded
Directions:
1. heta oil in pan, add onion,garlic and spices stirring until onions are soft.
2. stir in peas,beans,lentils,stock ,juice and mint,simmer covered, for about 20minutes stirring occasionally or until lentils are tender
3. stir i spinach simmer uncovered about 5 minutes or until spinach is just wilted.
