Thick stew like dish. Recipe is from 1,001 Low Fat Vegetarian Recipes 3rd Edition by Sue Spitler page 137 Original recipe calls for 1 cup Farfalle (bow ties). Actually I forgot to put the pasta in, but like the stew just fin without.
Ingredients:
1 cooking spray
8 oz zucchini
2 c fresh sliced mushroom
1 med onion, chopped
3 cloves garlic, minced
1 tsp rosemary
1 tsp thyme
1/8 tsp crushed red pepper flakes
24 oz vegetable stock
15 oz crushed tomatoes
2 tbs finely chopped parsley
1 tsp lemon juice
1 1/2 cup chick peas
4 oz uncooked pasta
Directions:
1. Saute onion, garlic, until soft. Add broccoli and mushrooms and spices until mushrooms soften and broccoli is bright green. Add stock, tomato and lemon juice. Garnish with parsley.
2. Note: I had some chick peas left over after cooking a batch for chick pea cutlet. Starting with dried beans is more work, but I am told they are easier to digest.
