Really easy and a nice, fresh summer salad.
Ingredients:
1/2 green bell pepper, chopped
1/2 purple onion, chopped
2 cans chickpeas (garbanzo beans), drained & rinsed
1 carrot, shredded
1/4 cup lemon juice
2 tbsp olive oil
1/4 cup parsley, chopped
Directions:
1. Combine all ingredients. Better when left in the frige for several hours.
