Chickpea Salad

Great side dish or snack.
Ingredients:
2 (20oz) cans chickpeas
6 scallions, trimmed and finely sliced
2 tbs lemon juice
3/4-1 tsp salt
1/4 tsp freshly ground black pepper
2 tbs minced parsley
1 fresh green pepper, minced
1/4 tsp cayenne pepper
Directions:
1. Pour contents of chickpea cans into pot and bring to a boil.
2. Drain and discard liquid.
3. In serving bowl, mix all ingredients and chick peas.
4. Mix well and set aside, unrefrigerated for an hour.
5. Mix again and serve cold or at room temperature.
6. Refrigerate leftovers.
