This was supposed to serve 4 but as a side dish it goes a little further. Good for leftover ham.
Ingredients:
2 cups (1 15 oz. can) chickpeas, rinsed & drained
1/4 lb. sliced lean ham, cubed or in strips
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 small red onion, chopped
2 tablespoons apple cider vinegar
2 teaspoons olive oil
1/4 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Directions:
1. Combine all ingredients in a large bowl. Serve at once or refrigerate, covered, up to overnight.
2. You can make it ahead of time by combining all but the ham and refrigerating it up to 3 days, just add the ham at serving time.
