Quick, refreshing salad that we eat with spicy foods.
Ingredients:
1 16-ounce can chickpeas, rinsed
1 large, seedles cucumber, peeled and diced
2 cups cherry tomatoes, halved
1/4 cup crumbled feta cheese
1/4 cup red onion, diced
1/2 cup ranch dressing
salt, freshly ground pepper, and dill to taste
Directions:
1. Place chickpeas, cucumber, tomatoes, cheese, onion, dressing in a medium bowl. Mix until coated. Spice to taste.
