Chickpea Chorizo Salad

A tasty dinner a co-worker made me. Yummy with a crusty baguette or warm naan!
Ingredients:
3 chorizo sausages, cooked and crumbled
3 cans garbanzo beans, drained
1 c evoo
1/3 c cider vinegar
1 medium onion, finely chopped
2-3 tbsp parsley, chopped
3 cloves garlic, grated
2 tsp oregano
1 heaping tbsp ketchup
salt and cayenne to taste
Directions:
1. Place first two ingredients into a large bowl.
2. Place the next seven ingredients into a mason jar and shake until blended.
3. Pour over chorizo and chickpeas.
4. Add salt and cayenne to taste and mix.
5. Serve with a crusty baguette or naan bread.
