Chickpea Chocolate Chippers

Use a good-quality, dark chocolate chip for these, the rich cocoa content will play up beautifully with the nutty garbanzos.
Ingredients:
1 (15 oz) can chickpeas, drained and rinsed
2 tsp vanilla
2 tbsp water
2/3 cup brown sugar
2 tbsp sugar
1/2 cup stick margarine
1/4 cup shortening
1 cup flour
1 cup whole wheat flour
1/2 cup old fashioned oats
1 tsp cornstarch
1 tsp baking soda
1/2 tsp salt
1 cup miniature dark chocolate chips
Directions:
1. Preheat oven to 350F.
2. Puree chickpeas, vanilla and water until very smooth. Set aside.
3. Cream sugars, margarine and shortening in a large bowl.
4. Beat in chickpea mixture.
5. Mix together flours, oats, cornstarch, baking soda and salt. Beat into chickpea mixture.
6. Fold in chocolate chips.
7. Bake on ungreased sheets for 11-12 minutes.
8. Cool 2-3 minutes on sheets then remove to a wire rack and cool completely.
