Chickpea and Spinach Tortilla

a firm favourite that will encourage kids to eat their spinach
Ingredients:
8 ounces chickpea flour
1/4 pint water
1/2 lb spinach, boiled and chopped
1 egg white, stiffly whipped
1 ounce breadcrumbs
salt and pepper
parsley
Directions:
1. mix all ingredients and fold in the egg white.
2. spoon into hot oil and fry (like little small omelettes).
