Chickpea And Cabbage Soup

This is a great soup if you are a vegetarian or trying to reduce the amount of meat you eat.
Ingredients:
1 15 oz. can garbanzo beans, drained and rinsed
*i sometimes use romano beans
6 cups water
4-6 large outer cabbage leaves, shredded
1 cup uncooked brown rice
4 slices swiss cheese
2 garlic cloves, finely chopped or minced
1/2 tsp dill, finely minced
1/2 tsp oregano, finely ground
1/2 tsp. thyme, finely ground
2 tbsp. extra virgin olive oil
1 tsp. sea salt
1/4 tsp. ground white pepper
a dash of hot sauce can replace the pepper
Directions:
1. In a two-quart saucepan, add water and salt.
2. Bring to a boil, add rice, and cook covered for 20 minutes.
3. Then add remaining ingredients and bring to a second boil.
4. Reduce heat and simmer for 25 additional minutes.
5. Remove from heat and spoon into soup bowls.
6. Lay one slice of Swiss cheese over each serving.
7. Serves 4
