Chicken With Garlic and Lime

Ingredients:
2 tablespoons vegetable oil
8 chicken thighs or 4 chicken breasts, skinned
1 onion, chopped
3 garlic cloves, minced
1 tablespoon grated lime (or lemon rind)
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup chicken stock
1/4 cup lime juice (or lemon juice)
1 teaspoon cornstarch
Directions:
1. in large deep skillet or dutch oven, heat half of oil over med-high heat; brown chicken pieces about 10 minutes, remove chicken from pan and set aside.
2. drain fat from pan.
3. add remaining oil, fry onion, garlic, lime rind, cumin, oregano, salt, and pepper over medium heat stirring occasionally until onions are tender.
4. add chicken stock and lime juice, bring to a boil, scraping up brown bits. return chicken along with any juices from chicken to pan.
5. cover and simmer until juices run clear when chicken is pierced, about 15 minutes.
6. in a bowl whisk cornstarch with 2 teaspoons of water. pour into pan, stir and simmer until thickened.
