Chicken White Bean Soup

Thick and healthy soup for a cold day.
Ingredients:
2 t chopped garlic
1 c chopped white onion
1 c sliced carrots
1 c diced celery
2 t olive oil
3 c chicken, leg, meat only cooked, stewed
2 c white beans
4 c chicken broth
Directions:
1. Prep work:
2. Chop all veggies
3. Soak dry beans the night before or rinse and drain canned beans same day.
4. Just cover chicken legs/thighs in water and boil until done. Remove and discard skin and bones.
5. Add olive oil to dutch oven on medium heat.
6. When oil is warm/hot saute onion, celery, carrots until translucent. (10-20 min)
7. Add garlic and saute for about a minute more.
8. Add chicken broth, beans
9. Simmer for approximately 1 to 2 hours (check that beans are cooked through)
10. Salt and Pepper to taste.
11. I have measurements here, but just throw it all together. Adjust as needed.
