Chicken Velvet Soup

A very rich soup and simple to make.
Ingredients:
6 tablespoons butter
6 tablespoons flour
1/2 cup milk
1/2 cup light cream
3 cups chicken broth
1 cup cooked chicken, finely chopped
1/8 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Melt butter. Stir in flour to blend.
2. Slowly add milk, light cream, and chicken broth, stirring constantly until smooth.
3. Bring to a boil.
4. Reduce heat and stir in chicken. Add cayenne, salt and pepper.
5. Return to boiling and serve immediately.
