Ingredients:
1/4 cup nonfat mayonnaise
1/4 cup rice wine vinegar
1 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper
2 cups finely shredded cabbage
1 cup chopped cooked chicken breast (skinned before cooking and cooked without salt)
1/4 cup seeded, chopped tomato
1/4 cup coarsely shredded carrot
2 tablespoons chopped cucumber
1 tablespoon chopped green onions
2 teaspoons chopped unsalted cashews
Directions:
1. Combine first 5 ingredients in a small bowl, stirring well with a wire whisk.
2. Combine cabbage and next 5 ingredients; add mayonnaise mixture, and toss gently. Sprinkle with cashews just before serving.
