I got this recipe from the back of Catelli Smart Pasta (Rotini) Smart Pasta is great to get the same nutritional values as or better than whole wheat pasta for those who don't really care for the taste of whole wheat pasta.
Ingredients:
454 g whole wheat pasta, catelli healthy harvest (1 pkg)
1 clove garlic, minced
1 small zucchini, thinly sliced
250 ml mushrooms, fresh, thinly sliced (1 cup)
1 onion, thinly sliced
30 ml olive oil (2 tbsp)
398 ml tomatoes, undrained, cut in small pieces (14 oz)
250 ml chicken or turkey, cooked, cubed (1 cup)
125 ml water (1/2 cup)
5 ml basil, dried leaves (1 tsp)
2 1/2 ml salt (1/2 tsp)
1/2 ml pepper, ground black
Directions:
1. In large skillet, cook garlic, zucchini, mushrooms and onion in oil until tender, but not brown.
2. Add remaining ingredients except pasta,
3. summer for 15 minutes.
4. Cook pasta according to package directions
5. Drain
6. Serve chicken and vegetables over pasta
