Ingredients:
2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
2 stalks celery, chopped
2 carrots, sliced
2 zucchini, sliced
1 cup butternut squash, cubed
1 red pepper, diced
1/2 cup yellow split peas
1 potato, diced
2 cups frozen corn
1/2 teaspoon cumin
1/2 teaspoon thyme
salt, pepper
1 bay leaf
5 cups chicken stock
2 cups water
2 chicken breasts, cubed
Directions:
1. heat oil in pot, add onions and garlic to soften.
2. add remaining vegetables,except corn, stirring.
3. add broth, water, spices, bring to boil and then lower to simmer for 1 hr.
4. pour half of soup into blender, until smooth, then return to pot.
5. add corn and chicken,cook on low 15 minutes,until cooked through.
6. season with salt& pepper.
7. if soup is too thick you can add extra water before serving.
