This is something I tried for the first time this last weekend. After researching many GR recipes and working with what I had in the pantry...I just went with what I had on hand. And then the next day or 2 I am thinking, I could've put that in there too! Read more ! LOL I've gotta admit I was a bit nervous about making it. I think it turned out really well. You really need shredded cheese and sour cream to finish it off. I also topped it with fresh chopped tomato and green onion. (this recipe utilizes leftover grilled chicken from the nite before but like I said, just use what you've got and go with it)
Ingredients:
6 leftover grilled chicken legs and thighs (remove skin and bones)
6 chicken legs and thighs poached with 4 cloves of garlic and 2 bay leaves and hickory salt (let cool, remove skin and bones)
broth leftover and strained after poaching chicken
red onion, chopped
green pepper, chopped (any colors would be good)
4 cloves roasted garlic
1 can diced tomatoes, italian seasoned
1 can fiesta corn
1 can black beans
1 small can green chiles
a palm full cumin
a palm full chili powder
chicken bouillon cubes, i used 5-6
a few shakes of cayenne and
a few shakes of cholula hot sauce, or your favorite
fresh ground hickory sea salt and pepper
(reheating this 2 days later i added about a cup of rice to it in the slow cooker)
corn tortillas cut into strips and fried in oil or warmed up in the microwave and then torn into pieces or fritos
Directions:
1. Prepare your chicken, boiling, deboning, shredding....
2. saute onion, green pepper, whatever fresh veggies you choose
3. add broth to veggies and start putting in canned goods: tomatoes, corn, beans, green chiles
4. add seasonings, cumin, chili powder, bouillon, cayenne, hot sauce
5. bring to a boil, add chicken, then down to a simmer
6. fresh ground Hickory sea salt and fresh ground black pepper
7. simmer simmer simmer...that only makes it better
8. put whatever tortillas or chips you want in the bottom of your bowl then layer the soup on, shredded cheese, sour cream, chopped fresh tomatoes and some green onions are good on this (duh, lol) to make hotter put some of your favorite hot sauce on top and extra chips never hurt. :)
