Chicken Tenderloins With Cranberry Mustard Sauce

Ingredients:

Directions:

  1. Season chicken with salt and pepper.
  2. Lightly toss with flour.
  3. Heat 1 tablespoon each of butter and oil in a large skillet.
  4. Add half the chicken and cook several minutes, turning and cooking until golden brown and cooked through. Add more butter and oil as needed while cooking.
  5. Remove chicken to a platter. Keep warm.
  6. Repeat with remaining chicken.
  7. Add wine, chicken broth and mustard to skillet, scraping up browned bits.
  8. Combine cornstarch and water in a small bowl.
  9. Stir into skillet.
  10. Add sweetened dried cranberries.
  11. Boil 1 or 2 minutes until sauce thickens.
  12. Stir in green onions and cook one more minute.
  13. Serve sauce over chicken.
