This is just a little something I threw together once in college using the spices in my kitchen. I like to serve it with steamed broccoli and wild rice.
Ingredients:
2 boneless skinless chicken breasts
1 tablespoon olive oil
1/8 teaspoon paprika
1/8 teaspoon salt
1/2 teaspoon tarragon
1/2 teaspoon basil
1/2 teaspoon pepper
1/2 teaspoon parsley flakes
2 slices mozzarella cheese
Directions:
1. Heat olive oil in skillet.
2. Add chicken and sprinkle with spices.
3. Cook until chicken is no longer pink and juices run clear (time depends on thickness of breasts).
4. Remove chicken onto plates; cover each breast with a slice of cheese.
