Chicken Tamale Pie

Great cook ahead and freeze recipe. This is a double recipe. You will need 2- 9x13 pans that have been sprayed with Pam.
Ingredients:
4 tablespoons olive oil
1 pound carrots
1 yellow onion
2 green peppers
1 red pepper
5 cloves garlic
1 pound frozen corn
1/4 teaspoons dried chives
3 teaspoons cumin
3 teaspoons chili powder
15 ounces diced tomato
3 ounces diced green chilies
1 tablespoon lime juice
2 pounds chicken breast, skinless boneless
1/2 cups cheddar cheese
1/2 cups mozzarella cheese
1/2 cup fresh cilantro
10 cups chicken broth
4 cups cornmeal
1 tablespoons butter
Directions:
1. Place carrots in large heavy skillet with spray fat free oil, salt & pepper. Cover & cook over medium-high heat for 5-8 minutes (semi tender but still crunch).
2. Add onion, peppers, garlic, olive oil, cumin, chili powder, and chives to pan reduce heat to medium for 20 minutes without browning.
3. In the meantime, put chicken breasts in another skillet (no oil or spray) at medium with lid). Turn chicken every 5 minutes.
4. Once vegetables are softened, add tomatoes, chilis, and lime juice. Bring vegetables to simmer and cook for several minutes, until slightly thickened.
5. Remove chicken from pan and slice into small pieces (marble size). Best to use 8 chef knife.
6. Toss chicken, cilantro, and corn into vegetable pan. Mix well and lower temperature to low.
7. Preheat oven to 425 degrees.
8. Make Polenta in two batches.
9. Put 5 cups of chicken broth in sauce pot, whisk in 2 cups cornmeal very slowly. Whisking constantly over medium heat. Continue whisking until very mushy, almost like oatmeal. Remove polenta from heat, add .5 table spoons of light butter.
10. Repeat previous step
11. Let polenta rest and cool for 5 minutes (it will get a film across the top- which is good).
12. Spoon half of one polenta mixture into bottom of cassarole dish.
13. Add meat filling.
14. Spoon other half into top of casserole dish.
15. Do these last 3 steps again for the second casserole dish.
16. Dot the top of each dish with a tiny bit of butter (1 tbl each).
17. Place in over for 35-45 minutes (middle of oven).
