Chicken Taco Cups

Great Mexican flavor in a bite sized cup
Ingredients:
1 lb. boneless, skinless chicken breasts, cut into 1 inch pieces
1 envelope taco seasoning
olive oil
1 small onion, chopped
1 -16 oz. jar salsa, divided
2 cups mexican cheese blend
36 won ton wrappers
sour cream and chopped green onions to garnish
Directions:
1. Preheat oven to 375
2. Coat chicken with taco seasoning
3. Heat olive oil in skillet over medium high heat
4. Add chicken and stir until juices run clear, about 5 minutes
5. Put cooked chicken in a food processor and process until chopped
6. In mixing bowl, add chicken, onion, half of salsa and 1 cup cheese and mix until blended
7. Press won ton wrappers into greased mini muffin tins
8. Bake 5 minutes or until light brown
9. Spoon a rounded tablespoonful of chicken mixture into won ton cups
10. Top with remaining salsa then cheese
11. Bake 15 minutes or so until warmed through
12. Garnish with sour cream and onions
