Chicken Taco and Rice

This is an easy meal to put together and is a long time favorite in out home. It makes plenty and the leftovers are the best part.
Ingredients:
1 lb boneless chicken breast
2 tablespoons oil
1 (13 ounce) can chicken broth
1 (14 ounce) can tomato sauce
1 (1 1/4 ounce) package taco seasoning mix
1 (12 ounce) can corn (drained)
1 1/2 cups minute rice (uncooked)
1/2-1 cup sharp cheddar cheese (graded)
1 (14 1/2 ounce) bag tortilla chips (restaurant type)
Directions:
1. Saute CHICKEN in OIL until done (does not have to be brown).
2. Stir in CHICKEN BROTH, TOMATO SAUCE, TACO MIX (dried from pkg) & CORN.
3. Bring to a boil,.
4. Cover and simmer for 5 mins (stir occasionally).
5. Stir in RICE, cover and remove from heat (let stand 5 minutes).
6. Sprinkle CHEESE on top and serve with TORTILLA CHIPS.
