Chicken Stew

This is a quick to toss together, fast cooking very tasty stew. Absolutely bonkers about it in this house.
Ingredients:
approx 2 cups of chicken breasts diced up into bite sized pieces.
2 cups chicken broth
4 cups diced potatoes, skin on or off as desired
1 1/2 cups carrots
1 cup onion diced
1 clove garlic (i double this for our tastes)
1 (15 or so oz can diced tomatoes
1 bayleaf
salt and pepper to taste
1 ts thyme (italian seasoning works well also)
1/4 cup or less oil ( i use less)
Directions:
1. Heat oil in large pot, saute onions for 2 minutes.
2. Add all ingredients except chicken, potatoes and carrots
3. Bring to a boil.
4. Add potatoes, carrots, and chicken.
5. Simmer covered until vegetables are done, about 30 minutes.
6. Thicken with cornstarch if you like a thicker stew. (I have never needed this )
