Chicken Soup With Sweet Potatoes and Rice

I made a whole chicken in the crock pot and ended up with about 4 cups of broth and some leftover chicken. Made this soup the other night and hubby loved it - wanted to post so I don't forget. Simple and delicious.
Ingredients:
6 cups chicken broth
1 large sweet potato
1 medium onion
2 carrots
2 stalks celery
1 1/2 cups cooked chicken
1/2 cup brown basmati rice
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
salt
pepper
Directions:
1. Coarsely chop onion, carrots, celery. Place in large stockpot. (Can be sauteed in a little oil for deeper flavor.).
2. Peel and chop sweet potato. Add potato and broth to veggies. Simmer for about 1 hour until veggies are tender.
3. Add rice and chicken. Stir and cook for 30 minutes or until rice is done.
4. Add salt and pepper to taste.
