1. Flatten chicken breasts and season on both sides with salt and pepper 2. Heat 2 t of oil on medium-add chicken and cook 12-14 min till done turning once-cover with foil and keep warm 3. In same skillet add remaining oil-heat add artichokes and cook 3 min.-stir in broth and heat to boiling-boil 2-3 min. till reduced by half-remove from heat and add lemon juice and mint- 4. Serve artichoke sauce over chicken and top with feta and additional mint leaves.
