Chicken Saute' with Artichokes, Lemon, and Mint

Ingredients:
1 package(s) artichoke hearts thawed or 1 can
3/4 cup(s) chicken broth
1/4 cup(s) chopped fresh mint
1/4 cup(s) crumbled feta chese
1 tablespoon(s) fresh lemon juice
4 medium chicken breasts
4 teaspoon(s) olive oil
salt and pepper
Directions:
1. Flatten chicken breasts and season on both sides with salt and pepper
2. Heat 2 t of oil on medium-add chicken and cook 12-14 min till done turning once-cover with foil and keep warm
3. In same skillet add remaining oil-heat add artichokes and cook 3 min.-stir in broth and heat to boiling-boil 2-3 min. till reduced by half-remove from heat and add lemon juice and mint-
4. Serve artichoke sauce over chicken and top with feta and additional mint leaves.
