Satay is an Indonesian-style kebab featuring small cubes of meat or poultry; the kebabs are usually served with a spicy peanut sauce. Although satay is often served as an appetizer, this version is hearty enough for a main dish.
Ingredients:
12 chicken breast tenders (about 1 1/2 pounds)
3 tablespoons fresh lime juice
1 tablespoon low-sodium soy sauce
2 teaspoons fish sauce
2 garlic cloves, minced
1/2 teaspoon crushed red pepper
1 tablespoon canola oil
3 tablespoons low-sodium soy sauce
3 tablespoons fresh lime juice
2 tablespoons creamy peanut butter
1 tablespoon honey
1 teaspoon grated peeled fresh ginger
1 garlic clove, minced
cooking spray
Directions:
1. Soak 12 (6-inch) wooden skewers in water 30 minutes.
2. While skewers soak, combine first 7 ingredients in a large zip-top plastic bag; seal and gently shake bag to coat chicken. Marinate in refrigerator 15 minutes.
3. Combine soy sauce and next 5 ingredients, stirring with a whisk.
4. Prepare grill.
5. Remove chicken from bag; discard marinade. Thread each chicken tender onto a skewer. Place chicken on grill rack coated with cooking spray. Cover and grill 3 minutes on each side or until done. Serve chicken with peanut sauce.
