Chicken Sandwiches for Two (For Leftover Chicken Breasts- Delish

This recipe gives a whole new outlook on leftovers! My husband took this to work for his lunch I quote, If you had told me what was on it I wouldn't have tried it, but it was soooo good! Simple recipe, you can make this as a main meal without using leftover breasts as well, it's a good party pleaser.
Ingredients:
1 chicken breast, halved
2 cups fresh spinach
2 slices provolone cheese
2 teaspoons ground garlic
2 tablespoons barbecue sauce (i use kraft original)
2 tablespoons yellow mustard
2 whole grain buns (i use healthy white wheat)
Directions:
1. Rub garlic into chicken breasts, if uncooked, cook stovetop until juices run clear. If already cooked, add light garlic and proceed to step 2.
2. Move hot chicken breasts to a plate, lay a slice of provolone over each piece.
3. Pop buns in toaster on a setting of your liking
4. While buns toast, wilt spinach over low heat in same pan.
5. When the buns are done, spread barbeque sauce and mustard on both.
6. Layer chicken, then spinach.
7. Top off and enjoy!
