Ingredients:
1 1/2 cups chopped cooked chicken breast
2 cups chopped unpeeled red delicious apple (about 1 large)
1/4 cup minced red onion
1/4 cup light mayonnaise
1/2 teaspoon curry powder
1/2 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup chopped red bell pepper
8 (1.2-ounce) slices whole wheat bread
Directions:
1. Combine first 9 ingredients in a large bowl. Spread 1 cup chicken mixture onto each of 4 bread slices. Top with remaining bread slices.
