Chicken Salad Boat

Not your usual leftover poultry.
Ingredients:
1 pineapple
4 to 5 cups cooked left over chicken or turkey, cubed
1/2cup carrot, shredded
1/2 cup celery
1/2cup raisins
1/2 cup dried cranberries
6 tbsp. pecans, chopped
1/2 cup mayonnaise
1/2 cup vanilla yogurt
4 tbsp. sweet pickle relish
1/4 tsp. salt
Directions:
1. Cut pineapple in half lengthwise, keeping leafy crown attached. Remove the inner portion in sections from one half, creating a boat. Repeat with remaining half for another use.
2. Remove woody core then cut sections into 1/2 chunks.
3. Combine pineapple with remaining ingredients.
4. Return mixture to the pineapple boat.
