P90X chicken salad, level 1
Ingredients:
6 oz boneless, skinless chicken breast
2 tbs low-fat mayonnaise
3/4 tbs dijon mustard
2 tbs scallions, diced
1/8 tsp fresh dill
1/4 cup celery, diced
Directions:
1. Poach chicken; cool and dice
2. gently combine the chicken with the remaining ingredients and chill until ready to serve.
