An Arby's-style chicken salad. Serve on low-carb or whole grain bread or wrapped in a low-carb tortilla. Add some lettuce leaves and/or sliced tomato to sandwich, if desired.
Ingredients:
1 lb chicken breast
1 cup light mayonnaise
1 cup celery, diced
1/2 cup onion, diced
2 oz walnuts, chopped
1 cup grapes, halved
Directions:
1. Simmer 1 lb chicken breasts in salted water until tender, or use equivalent amount pre-cooked chicken breast.
2. Combine cooked chicken with all other ingredients and salt and pepper to taste, if desired.
