Light and tasty...could use no-fat mayo with a dash of lemon juice
Ingredients:
4 chicken breasts
1 cup chopped celery
1 cup toasted slivered almonds
1 cup mayonnaise
salt & pepper
Directions:
1. cook chicken in chicken stock until done - let steep for about 15 minutes - drain - chop into bite sized pieces - add to celery and almond - mix with mayonaise, salt , and pepper. Refrigerate.
