Chicken Ricotta Meatballs

Ingredients:
1 pound(s) ground chicken thighs
1 cup(s) ricotta cheese
1/4 cup(s) bread crumbs
1/2 cup(s) minced onion
2 clove(s) garlic minced
1 egg beaten
1 teaspoon(s) salt
1/4 teaspoon(s) black pepper
Directions:
1. Preheat the oven to 450 degrees.
2. In a large mixing bowl, combine the ground chicken, ricotta cheese, bread crumbs, onion, garlic, egg, salt and pepper. Using your hands, mix gently until well combined.
3. Form into meatballs the size of ping pong balls (about 30 grams) and arrange on a silcone mat or parchment-lined baking sheet and bake for 20 to 25 minutes, turning after about 15 minutes, until golden brown in spots. Transfer to a pot of tomato sauce, and serve with cooked spaghetti or in hoagie rolls for meatball subs.
4. NOTE:If you cannot find ground thighs, and you cannot get a butcher to grind them for you (actually, find another place to shop - kidding - sort of) get boneless skinless thighs and mince them in a food processor.
