This is a simple dish for a quick lunch.
Ingredients:
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1/2 tablespoon lemon juice
1/2 teaspoon ground ginger
1/4 teaspoon turmeric
1/4 teaspoon cumin
1/4 teaspoon salt
1/4-1/2 onion, finely chopped
1 roma tomato, diced
1 cup cooked skinless chicken breast, diced
1 (15 ounce) can chickpeas, drained and rinsed
1 -1 1/2 cup cooked rice, cooled
Directions:
1. Mix the ingredients for the dressing together in a small bowl, set aside.
2. Place the salad ingredients in a medium glass bowl. Pour the dressing over top then stir until well blended.
3. Serve cooled or at room temperature.
