Adapted from . long grain rice, light Monterey Jack cheese, cooked chicken breast, evaporated milk, red onions, egg, egg whites, fresh cilantro, butter or margarine, jalapeno pepper cvt
Ingredients:
2 cups cooked long grain rice
2 cups (8 oz.) light monterey jack cheese (109296), shredded
1 1/2 cups cooked chicken breast, chopped
1 can (12 oz.) evaporated milk
1/2 cups red onions, finely chopped
1 large egg, lightly beaten
2 egg whites
1/4 cup fresh cilantro, finely chopped
2 tbsp butter or margarine, melted
1 tbsp jalapenos (11632), diced (optional)
Directions:
1. PREHEAT oven to 350 degrees. Grease a 2-quart casserole dish.
2. COMBINE ingredients well in dish.
3. BAKE 45 to 50 minutes or until knife inserted in center comes out clean.
