Ingredients:
1 cup minute ready to serve brown rice
1/2 cup (3 ounces) cooked chicken breast, diced
1/4 cup chedder cheese, shredded
1/4 cup salsa
2 whole wheat tortillas
chopped cilantro, optional
fat free sour cream, optional
Directions:
1. Prepare rice according to package directions. In a medium microwave-safe bowl, combine salsa and chicken. Microwave on HIGH two minutes. Stir in cheese and rice. Divide mixture onto tortillas and fold. Serve with cilantro and sour cream, if desired.
