Chicken Pesto Salad

Ingredients:
1 tablespoon pesto sauce
1 cup plain low-fat yogurt
1/8 teaspoon cayenne
1 1/2 cups chicken, cooked and shredded
1/4 cup onion, diced
3/4 cup celery, diced
1/2 cup red pepper, diced
6 cups mixed greens
1/4 cup carrot, shredded
1/4 cup mixed sprouts
16 slices cucumbers
16 cherry tomatoes
Directions:
1. Mix pesto with yogurt and cayenne.
2. In a seperate bowl, mix chicken, onions, celery and red pepper.
3. Blend chicken mixture with yogurt mixture.
4. To assemble, evenly divide greens and carrots among four plates. Then plate four cucumbers and four tomatoes around the edges. Add a mound of chicken salad in the middle of each plate with sprouts on top.
