Chicken Peanut Stew

Ingredients:
3 lb boneless skinless chicken thighs
2 tbsp extra virgin olive oil
1 large onion
6 cloves garlic
3 lbs yams
15 oz diced tomatoes
1 quart low-sodium chicken broth
1 cup natural peanut butter
1 cup peanuts
1 tbsp coriander seed
1 tsp cayenne pepper
2 tsp black pepper
1/2 cup chopped cilantro
Directions:
1. Dice onion fine, peel & dice ginger & garlic, cube yams (and chicken if desired).
2. Heat the oil in a large soup pan. Brown the chicken in batches, set aside and scrape the pan.
3. Saute onions 2-4 minutes, until translucent. Add ginger and garlic, saute 1-2 mins more.
4. Add yams, chicken, broth, tomatoes, peanut butter, peanuts, coriander, pepper, and cayenne. Simmer 10-20 mins, adjust flavor to taste.
5. Cover and simmer until done, at least 90 mins total, checking occasionally and adjusting flavor to taste.
6. Stir in cilantro, remove from heat.
