From my Ultimate Southern Living Cookbook. One of our family favorites Ingredients:
4 boneless skinless chicken breast halves |
3/4 cup italian seasoned breadcrumbs |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 large egg, lightly beaten |
1/4 cup vegetable oil or 1/4 cup olive oil |
1 tablespoon vegetable oil or 1 tablespoon olive oil |
1 (14 ounce) jar meatless spaghetti sauce |
2 tablespoons grated parmesan cheese |
1 cup shredded mozzarella cheese |
1/4 cup chopped fresh parsley |
hot cooked spaghetti |
Directions:
1. Place chicken between two sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness, using a meat mallet or rolling pin. 2. Combine breadcrumbs, salt, and pepper. 3. Dip chicken in egg, and coat with breadcrumbs. 4. Place chicken on an ungreased baking sheet; cover and chill 10 minutes. 5. Brown chicken in 1/4 cup hot oil in a large skillet over medium heat, turning once. 6. Remove chicken from skillet, and place in a 13 x 9 inch baking dish. 7. Spoon spaghett sauce over chicken. 8. Bake at 375 degrees for 15 minutes. 9. Tope each piece of chicken with mozzarella cheese, and bake 5 more minutes or until cheese melts and sauce is bubbly. 10. Sprinkle with parsley. 11. Cover spaghetti noodles with sauce and serve! |
