Chicken Parmesan

Easy chicken parmesan. You don't have to use chicken. This works with any meat, eg veal cutlets, steak cutlets, pork cutlets, etc. You don't have to use Ragu sauce. Use whichever Pasta sauce you prefer or make your own.
Ingredients:
1 cup bread crumbs
1/4 cup grated parmesan cheese
2 tbsp olive oil
2 breasts, chicken, breast, skinless/boneless, meat only
2 cups (ragu) pasta sauce
1 cup fat free mozzarella cheese, grated
Directions:
1. In shallow fry pan heat 1-2 tbsp olive oil on medium heat.
2. Combine breadcrumbs & parmesan cheese in one bowl
3. beat eggs in another bowl.
4. Fillet each chicken breast (you will end up with 8 pieces).
5. Dip each chicken breast fillet in egg mixture then dip lightly in breadcrumb mixture.
6. Pan fry until brown. You will know the chicken is done when you press gently on the thickest part and the meat is firm.
7. Top with spagetti sauce.
8. Sprinkle grated mozzarella cheese on top.
9. Cover with foil.
10. Bake at 350 for 1/2 hr or until cheese browns lightly.
