I can't believe how many chicken recipes I have!! This is another gooder!
Ingredients:
6 boneless chicken breasts
2 tbsp. vegetable oil
1 tbsp. red wine vinegar
1 tsp. ketchup
1 tsp. worcestershire sauce
1/8 teaspoon dry mustard
1/4 cup butter
1 tsp. flour
2 tsp. paprika
1 tsp. curry powder
1/2 cup chicken stock
1/2 cup whipping cream
1 tbsp. butter
8 fresh mushrooms, quartered
1 red pepper, sliced in rings
chopped fresh parsley
Directions:
1. Preheat oven to 350 F. Place chicken in a baking pan. In a small bowl, mix the oil, vinegar, ketchup, Worcestershire sauce and mustard. Brush chicken with mixture and bake 30 to 40 minutes until tender, basting occasionally.
2. Melt butter in a saucepan over low heat. Stir in flour and spices and simmer 5 minutes. Stir in stock, increase heat and cook until sauce comes to a boil. Add cream and heat but do not boil.
3. In a separate pan, melt 1 tbsp. butter and sate mushrooms lightly. Place chicken breasts on plates; top with mushrooms and paprika sauce. Garnish with red pepper and parsley. Noodles are the traditional side dish but this is also good with rice.
