Chicken Over Noodles (or Rice)

By using the Aylmer Italian Tomatoes I avoid having to use any seasonings. If you use plain stewed tomatoes or make your own you will have to add herbs/spices to season to your own taste. There is an Egg noodle in the stores that is actually called No Yolk Egg Noodles. If you want to add some more colour or flavour chop up some bell peppers (red, green, orange and/or yellow) and add into the skillet.
Ingredients:
1 tbsp olive oil
1 cup carrot - chopped
1 cup celery - chopped
1/2 cup brocolli
2 chicken breast - meat only
14 1/2 oz stewed tomatoes - canned (i use aylmer stewed tomatoes with italian seasoning)
1 cup egg noodles - no yolk or rice
200 g part skim mozzarella, shredded
4 tsp. grated parmesan cheese
Directions:
1. Fillet Chicken to make 8 pieces
2. Grill Chicken Fillets using a little of the olive oil as possible
3. In deep skillet, combine Chicken, vegetables, Stewed Tomatoes
4. Cover and simmer on low heat for 10-20 minutes (until you are satisfied the vegetables are tender enough)
5. Cook Rice (or noodles)
6. When the rice (or noodles) are done pour onto appropriate sized serving dish, top with Chicken.
7. Sprinkle cheese on top or serve with cheese on the side and let each person choose how much cheese they want for themselves.
